A little trinket is hidden in the cake and the person who gets it becomes the King or the Queen of the day, and wears the paper crown.
Most of the time, the trinket is a little figurine of plastic but it used to be a bean, and I personally always use a bean when I bake a galette, because, hey, I'm not going to put plastic in my cakes!!
 
La traditionnelle galette des rois, avec une vraie fève comme fève, parce que je ne mets jamais de morceaux de plastique dans mes gâteaux! ;)
